We're excited to introduce Hajime, our very first release of our Ceremonial Grade Matcha range.

Hajime ( はじめ), translates to beginning or commencement of something new, a first chapter if you will, and represents the relationship with our first farmer. It's a single cultivar from the renowned Wazuka, Kyoto region in Japan. Known for the spectacular hills and cool climates which produces a beautiful bight coloured matcha with a fresh scent and tons of depth in flavour. A first flush harvest grown in the shade, then carefully stone-milled. 

On the palate, Hajime delivers a smooth creamy finish, layered with fresh notes and subtle sweetness

Ingredients: 40g organic matcha

Region and Farm

During our first trip to Japan, this was the last farmer we spent time with, and yet our first release. This beautiful family farm is located in the Wazuka prefecture, and has been passed down through 4 generations. The farm is small, yet a powerful family team who cares immensely about maintaining the traditional, high quality practices of Matcha farming. A part of the Kyoto area, this region is known for it's rolling hills.

How to prepare

Hot Latte
1. Measure 2–4 g of Matcha into a sifter and sift it into your whisking bowl. This prevents clumps and gives you that silky finish.
2. Soak your bamboo whisk for 30–60 seconds to soften the tines — it protects the whisk and creates better foam.
3. Add a splash of hot water (just enough to cover the Matcha).
4. Whisk in a quick zig-zag motion until the Matcha turns smooth and frothy.
5. Add the rest of the hot water or warmed milk and whisk gently to combine.
6. Pour into your cup, top with warm milk, and enjoy your creamy hot latte.

Iced latte
1. Measure 2–4 g of Matcha and sift it into your whisking bowl to keep it lump-free (especially important for iced drinks).
2. Soak your bamboo whisk briefly to soften it — even for cold Matcha, it makes a difference.
3. Add a small amount of water (cold or room temp works best here).
4. Whisk in a fast zig-zag motion until the Matcha is fully dissolved and frothy.
5. Fill a glass with ice, pour in the milk, and then add your Matcha concentrate.
6. Stir, sip, and enjoy! Iced lattes are great for highlighting the more sweeter notes in the Matcha

Storing information

Keep your Matcha fresh and vibrant green by storing it properly:

  • Store in an airtight container: Matcha oxidizes quickly when exposed to air, so always keep it sealed tight.
  • Keep it cool and dark: Store in the refrigerator or a cool, dark cupboard away from direct sunlight and heat sources.
  • Avoid moisture: Make sure the container is completely dry and keep it away from humid environments.
  • Use within 1–2 months of opening: Once opened, Matcha is best enjoyed fresh. The flavour and colour will gradually fade over time.
  • Before opening: Unopened Matcha can be stored in the freezer for extended freshness — just let it come to room temperature before opening to prevent condensation.
